Who they are in the kitchen:
Commis Chef: a chef who works in a large kitchen under the Chef de Partie to learn the tricks and secrets of the kitchen. Often, this chef has only recently completed formal culinary training.
Chef de Partie: a chef who is a station cook or in charge of a particular section of the kitchen. This chef often works the line and can have assistant chefs under him/her.
Sous Chef: a chef who is responsible for the organization, cleanliness, and efficiency of the kitchen; a vice-chef of sorts. This chef will fill in for the Chef de Cuisine or Chef de Partie if either is absent and is the direct assistant to the Chef de Cuisine.
Chef de Cuisine: a chef who is in charge of the kitchen and all the delicious food, menu ideas, and helpful staff that a kitchen depends on. The English word “chef” comes from this French expression.
